{ Some of this and some of that...}

Oops I spaced "me thinks" yesterday so today is a little of everything!

First we sold our old house -- YEAH! So that is exciting cause nothing is really moving selling wise! So it really is a blessing to have sold it !

Lots of halloween stuff going on preschool parties, costumes, treats for school,

so much to do this week.

Room mom duties and PTA duties nothing hard just organizing helpers for the school book fair. But it all adds up!

Its also so so warm almost hot today crazy weather! We've had hurricane like winds most of last week and colder and now this week warm temps.

So here are some FHE pumpkin carving pics from last night, Kolten wanted to do one for a school contest so here is his puking pumpkin! I told him its his entry not mine so it had to be his hard work {I outlined it for him and he pretty much did the rest}

I think he did a pretty good job!

And whats a little pumpkin carving without dad teasing the kids!!

Also got my vinyl done on my walls -- so excited! Only one problem the living room live laugh love is too big and D says it screams at him, so we are redoing it but for now it looks like this. I love it. Can't wait to get our new family pictures up someday soon hopefully! IF you can't read the top one it says {be grateful be smart be clean be true be humble be prayerful.} Also got some Christmas presents and projects for the house almost done but I'll share those when I'm totally done!

We are always busy cooking and baking too and thought I'd share a couple of our favorite recipes.

We all love blueberry muffins

So here are Christal's Triple Berry Buttermilk Muffins:

2 1/2 cups flour
2 1/2 tsp. Baking powder

1 1/2 cups white sugar

1/4 tsp salt

1 cup milk with 2 tsp lemon juice {or 1 cup of buttermilk}

2 egg whites

1 tsp vanilla

1/2 cup applesauce

1 1/2 cups of frozen blueberries {or mixed berries}

wet /dry mixture put in muffin tins for 20 minutes at 400 degrees

Here is a new enchilada recipe from Kraft that we tried out the other night that is so so good!

1 each: onion and red or green pepper, chopped
1 lb. (450 g) boneless skinless chicken breasts, cooked, shredded
1 cup salsa, divided
125 g (1/2 of 250-g pkg.) Light brick Cream Cheese Spread, cubed
1 can green chilies
1/2 cup Cheese, divided
8 flour tortillas (6 inch)
PREHEAT oven to 350°F. Heat large skillet sprayed with cooking spray on medium heat. Add onions, peppers and garlic; cook and stir 2 min. Add chicken, 1/4 cup of the salsa, cream cheese spread, {a little cilantro and cumin if you have it opt}, green chilies; mix well. Cook until heated through, stirring occasionally. Add 1/4 cup of the shredded cheese; mix well.
SPOON about 1/3 cup of the chicken mixture onto each tortilla; roll up. Place, seam-side down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining 3/4 cup salsa and remaining 1/4 cup shredded cheese.
BAKE 15 to 20 min. or until heated through.
